Coming from a family that boasts four generations of Vermonters, I know my maple syrup and I can say without question that Dufresne’s Maple Sugar House provides the best syrup that I have ever tasted.
I had the blueberry ricotta pancakes at an upscale restaurant in Los Angeles because I saw them on Food Network’s Best Thing I Ever Ate. The host not only talked about the pancakes but the syrup that came with them: Dufresne’s Berkshire Maple Syrup. She was right. The pancakes were the best, but the syrup even made them better. I found the recipe for the pancakes, and as you are aware, I found the syrup. It was shipped promptly and arrived in time for weekend pancakes. Absolutely delicious. This is without question “The best syrup I ever ate.”

As a totally converted user of Maple Sugar from Dufresne’s Sugar House, I would like to tell other people how successful I have been in using the granulated sugar in “alternative recipes.” My daughter has severe food allergies along with celiac disease, so desserts (and food in general) have been a pretty tricky issue for her until I began using the Dufresne granulated maple sugar. As well as using alternative flours, dairy products, vanilla, and oils for desserts, I needed a non-refined sugar, not processed with grains, that did not add extra liquid to a recipe to make a cake, cheesecake or cookies. Maple sugar did it! I have been way successful, and regular “I can eat anything” people really love the desserts I have made so far! Thanks Dufresne’s!

I was delighted to find your top grade light syrup so reasonably priced. The quality and flavor were excellent—prompting me to use more of it than I anticipated! There was a special application which required my use of some of the early light syrup—making homemade maple candy. As we talked about my order on the phone, I was quite pleased with your knowledge of the technical aspects governing the properties of the light syrup in candy-making—fairly esoteric bits of trivia not widely known or in the average cookbook! Your light amber syrup functioned superbly with my candy recipe . . . which prompted additional candy-making . . . and I so enjoyed the syrup on pancakes and french toast—I had to make a second order for the year. Big fan here. I’ve been shopping with you guys for a few years and here’s what’s been great: First, not long ago the harvest was smaller than usual. When bigger retailers and commercial interests approached you, you turned them down in favor of your repeat customers (that’s me – and that was great). Second, the syrup is awesome. You can taste the country in it – if I was a real pro I bet I could say what wood was used for cooking. You don’t get that flavor in a store. Finally, last year I ordered a case of pints and that was my Christmas gift (hint, hint). The smiles I saw and the thanks a few weeks later were great. Thanks for your commitment to a “local” world and not a “global” world.
